Given all of the restaurants serving the famed Florentine steak and the multiple tourist traps does anyone have a recommendation for a place that serves the real deal steak from the indigenous cows.
Try Darios https://www.dariocecchini.com/?lang=en. We have not had a steak there, but he is local who raises his own beef.
You can do your own research on him, do not rely on my opinion
For many years the beef used for bistecca by Dario Cecchini was raised to his specifications in Catalonia, Spain. At the time he claimed it was more tender and had better marbling than Chianina beef.
Don't know if all the beef he uses now is from the Chianina breed.
Don't know where you are staying. Osteria Acquacheta in Montepulciano had great bistecca and is alot of fun.
There are many past posts about restaurants in Florence that serve good Florentine steak. Most serve Chianina although the Fiorentina describes a cut, rather than the breed.
From what I've heard and read, Dario's has become a bit of a tourist trap.

Since you have NO Firsthand knowledge, consider viewing some of the numerous YouTube videos that depict meals there prior to disparaging a place, or better yet, visit yourself and provide an informed opinion.
I never said the restaurant was not popular, I said I had heard, from many people I trust to be knowledgeable about food and restaurants, that it was filled with tourists. If you noticed the heading of this post, the OP is looking for a restaurant serving Chianina beef.

Chiri Biri is where I ate my first Fiorentina way back in 2001. It’s in San Gimignano. I don’t know if it’s still around, but it was quite excellent and cut like butter. Ate it myself. My wife thought I was nuts. Then my father-in-law a few years later bought a couple and we had them in his yard. It’s the cut, not the cow.
