Besides the usual stuff I would like to visit a farm and see how cheese is made. I am not interested in a factory. Can someone suggest something? Thank you..

I must admit - when I saw the title of the thread I was surprised because I never thought of artisanal cheese making in Assisi.
I have to get my TCI food books out and have a look, but they are not current.

We did this in Parma not Assisi. I caution you to consider a "factory tour". Ours was fabulous and was a family run business that ran 12 copper tubs of cheese twice a day. It was billed as a factory tour and was wonderful. We spoke to all of the family workers (I speak Italian) and this a highlight of our trip.
