asking for suggestions for new itinerary - leaving early July (yep, a few weeks)

Hi,
After checking the family's schedules, needs and wants, we have done a complete revision and canceled the Swiss portion of our trip and staying entirely in Italy. We have a slight open jaw trip and I may still see if I can get in or out of Milan (will keep checking flights) in order to extend that jaw a bit. We are using all miles, so a bit constrained.
We fly into FCO and return from Florence.
Originally we had intended to do 5 nights in Sorrento - which we still can, and then come back up to Florence. (If I'm able switch it to Milan, would probably incorporate the lakes.)
My kids are 18, 18 and 15. The older want to do Tuscan winery/farmhouse - already viewed some cool ones. I think we can get to the coast for beach time, especially if we continue to Sorrento.
What are your must see and dos?
We likely won't do much in Florence since we've already been there and our flight is early. A great dinner for the last night seems in order... what do you recommend (with a view, if possible)?

We will be there for roughly 2 weeks. I'm leaning toward immediately driving to Sorrento from FCO since we arrive at 7:30am. (Should i hire a driver? Any recommendation?) If I rent a car, it looks like it is mostly highway vs. mountainous/winding/narrow. I looked at the train schedule and it's about an hour longer than driving, however, it's a few on/off and we may be too exhausted to keep doing that. Does anybody know if the train view is worth all that? In the end, I think the price of the rental comes out cheaper.
I'm thinking to base 5/6 nights in Sorrento (plenty to do with that as a base), then swing back up north to Florence where we will stay another 5 nights. Specifically thinking Montepulciano as it seems a lot to do around there, including Florence.
There's only one change for the train which isn't bad but wondering if we shouldn't just rent in Sorrento and drive to Florence since we will need a car in Tuscany anyway?

Check out this bus, direct from the airport to Napoli Centrale. No changes, priced less than the train. Not a good idea to drive after a long flight.

Then continue to Sorrento using the Circumvesuvian, combined bus & train should get you there by check in time.

Renting in Sorrento is a good option for driving to Montepulciano.

I recommend Sorrento Silver Star - if you want ease and convenience upon arrival at FCO and to transfer directly to your stay in Sorrento. I have used them for private drive with family along Amalfi Coast, Pompeii, Paestum, Poistano, etc. and transfer from Sorrento back to Rome.
