Do the walk from Spello to Collepino along the aqueduct and have lunch at the restaurant in Collepino. Go to Norcia and the Monte Sibillini National Park. Visit Gubbio and ride the rather unusual funicular (just be quick getting on and off). Visit Assisi, Spoleto, Bevagna and some of the other towns.
How wonderful! We spent 5 nights there one winter and adored the town! Took a fun day tour with Gusto Wine Tours, something we could not have done on our own. Be sure to eat at Hostaria DaDa: low cost and very local/family/typical.
As mph mentioned, there are a lot of surrounding towns to visit. Perugia is worth a day, too. The blog Brigolante has some great tips about Umbria, too.
Be sure to visit the mosaics in the main parking area of the town of Spello. If you have a car, visit Todi. You may be able to get there by train/bus but the connections may be challenging.

You won't run out of things to do in Umbria. Visiting nearby Spoleto would be a nice day trip. In Spoleto be sure to take the free huge multi-sectioned outdoor (covered) escalator to visit the castle. Walk across the Ponte delle Torri near the castle. Assisi is also a favourite for many people, especially if you are a fan of Saint Francis ... : )
Also a side trip to Montefalco would be nice.
Gubbio and even Urbino are not too far for day trips. If you have any interest in ceramics, the town of Deruta is a must.
