I see a combination of fast reserved intercity trains with a regional connection (Verona-Firenze-Lucca) for 18 January but an earlier train is not yet open for booking. Can I assume that SOME regional trains are already scheduled but others are not yet scheduled? Thanks

If you divide the 0852 journey into its parts you will find that the regional connecting trains from Firenze to Lucca are on sale.
For some reason the block continues to be the 0852 frecc train from Verona to Firenze. For whatever reason that particular.train is being held off sale when the Freccs before and after it (for the rest of the day) are on sale.
So because the fast train isn't on sale that stops you buying the whole journey.

I decided to buy a train leaving around 9:37 from Verona with a change in Firenze and a direct train to Lucca. There seem to be frequent trains from Firenze to Lucca even on a Sunday so I should be OK.
