I have searched the website for apartments in italy. Immobiliare.it. They won't respond to my emails. Does that mean they won't rent to Americans?
Try Airbnb and VRBO, I've had great luck with both finding places in Rome and Florence.

I mostly rent apartments rather than staying in hotels. Home Away and VRBO are connected. Both show reviews and have insurance programs. Use the insurance. Never rent from someone nonresponsive. I want to see at least five reviews at least two of them recent.

I always use http://www.tripadvisor.com when booking apartments. Select the region you will be staying in, look at the reviews, and find what suits you.
Immobiliare.it is not a vacation rental website for foreigners. It's more for Italian residents who want to find homes to buy or rent (including vacation rentals). Not sure if they deal with people from overseas.
I suggest you look into Homeaway/homelidays/vrbo (different names but all part of HomeAway, Inc., which Expedia intends to acquire)

We use Booking.com for their apartment listings. I realize this site is not the cheapest way of getting an apartment but the real positive is that the reviews you read are only done by people who have actually rented the apartment. Booking sends invitations to review only to those who have rented through their website. We have had few disappointments.
