Hi. I am taking a RS tour of Sicily in October and I'm thinking about visiting Florence before the trip. The RS site has a link to Monastery stays. here is an example of one

Have used them several times, the last time was when were travelled Tuscany in November of 2010. We were quite happy with all except the 1 in Sn G, which was pretty basic and hard to find,even with a GPS, as they had a small door in the wall with no light outside. Suggest you check out the ones you are considering on Trip Advisor.
