You really don't want the dough prepared in front of you since it needs to rest (preferably for a few days). I think you may mean you'd like to see it tossed in front of you? If you're going to the Amalfi Coast you'll probably change trains in Naples - venture out to some place near the train station for the real pizza, there are lots of places nearby (the most famous is Da Michele).
Most pizza places make the pies in front of you. I doubt you'll see them making the dough but they will have the prepared dough balls waiting to be used. Donna
You won't find a wood burning pizza oven in Venice. Open fires were banned centuries ago which is why Murano has the glass furnaces. Venice is very aware of fire hazards.
They don't prepare it in front of you, but some of the best pizza we had in Rome was at Taverna Le Coppelle at Via delle Coppelle, 38, 00186. Google it for location. Happy travels.

Again, you probably won't see the dough prepared, but in Rome, at Dar Poeta in the Trastevere, if you get the table in the far back left as you enter, then you get to watch as they load the wood burning oven and bake the pizzas. The bonus is some of the best pizza in Rome, plus you have to have the Nutella/Ricotta dessert Calzone. The only caveat is that you will likely need to wait to get a table, meaning choice may not be an option.
