Anyone been to Spello or Bevagna on Easter Day (or little Easter)?

I know Assisi is probably a little hectic those days but should we avoid Spello and Bevagna as well? We have a hot air balloon flight scheduled for Easter Day in Bevagna and wondering if we should avoid the town afterwards for dinner. (Recommendations appreciated if not!)
