Spello is filled with flowers, beautiful town.
We love the little town of Montone. It’s not overrun with tourists, and has just a few shops...easy to feel (and be treated) like a local after a few days. We’ve stayed at Locanda del Capitano three times...it’s near the town piazza... Because Montone was more of a destination for us, we visited Gubbio as a side trip....Perugia and Assisi are close by as well. We love to eat “local” and Montone has a variety of restaurants.
If you have a particular interest in pottery, you could visit Deruta (possibly as a day trip from Perugia).
Umbria is one of my favorite regions. So many places from which to choose.
Assisi is wonderful...the Basilica of San Francesco is grand...as are other churches. Just walk and wander, spend some time looking out over the beautiful countryside of Umbria, especially at sunset. Favorite restaurant: Trattoria Pallotta.
Perugia offers its own beautiful churches and walks. A long walk, but worth a visit, in my opinion, is Chiesa di Sant'Angelo. Favorite restaurant: La Taverna. Pasticceria: Sandri
Visited Gubbio as a day trip from Perugia. No restaurant recommendations, but Gubbio is a beautiful town. Great views from Piazza Grande and elsewhere. I'd like to visit again and spend a night or two.
Spello is yet another quiet, beautiful town to walk around in. Had a very good lunch at Enoteca Properzio.

We love Umbria. We first visited in 2001 and have made it a part of each of our 5 Italy trips since then. Our next trip is in 10 days and Spello is our first stop. We usually rent apartments and in Assisi can recommend Palazzo Minciotti where we have stayed 3 times. If you like wine, Enoteca Properzio in Spello offers world class wines and is owned by the delightful Angellini family. They also rent apartments and on this trip we will be staying with them for the second time.
Umbria has many interesting and charming towns. I would recommend you consider hiring a guide for at least one of them. We have always been amazed by how much we would have missed without a guide. We have taken guided tours of Assisi, Gubbio, Bevagna, and Spello. Anne Robichaud (www.annesitaly.com) is excellent and can arrange someone else if she is not available. She has arranged a guide for us in Perugia later this month.
We found Umbria to be a lot like Tuscany minus the tourists. We used Perugia as our base and went to Assisi and Gubbio. Gubbio has this funky funicular just large enough for two people and you must hop on as it passes. It takes you up tp a mountaintop duomo with a former pope is a glass coffin. There is also a cafe up there and the views are gorgeous.
