any advice on Parma

My daughter and I are planning a two-day stop in Parma in mid-October. We will be arriving by train from Milan and do not plan on renting a car. In addition to seeing the city one of our main goals is to tour a Parmiggiano-Reggiano factory...any advice/suggestions)? I've read up on some of the tours( which seem to be priced around 100eu/person) but not sure what to do. Also - I'm having trouble finding affordable yet pleasant lodging (approx 100eu/night). Open to suggestions...

I was in Parma for the day when the second large tremor occurred last summer; all of the major sites were closed (some for damage, some for inspection). Check to make sure that what you want to see is open. Several cheese factories were damaged, so be sure your tour information is up to date as well.
