This may sound like a crazy question but 5 of us will be traveling in Italy - Sorrento, Rome, Florence. If we need to take a cab I have read that 4 people can take a cab at a time? Is this true? Do they have cabs for larger parties like 5 or would we have to take 2.

Some taxi cabs have minivans that can accommodate 5 passengers plus the taxi driver. You need to specify so when you call the radio dispatch.
At taxi stands at station or airport, you may have to wait for one to arrive in line.
You can also use NCC (limo service), but they charge a bit more (they use fancy cars/vans). NCC must be prebooked (no stands available).
Hailing taxis is not practiced in Italy, so if you see a taxi driving around they won’t probably stop as they are on their way to pick up someone. Call or use their app (or walk to the closest taxi stand)
On one trip our taxi driver from the airport into Rome drove a minivan. You may require two cabs if you require transport of luggage as well.
6 of us went to several towns in Italy. When a van wasn't available, we took 2 cabs, making sure both had destination information. It never was a problem.
