Looking to sign up for a RS shared tour to Amalfi and Capri, the dates open for us are a Sunday and Tuesday. Are shops and restaurants open on Sundays? Are there any half day or evening trips to Capri? We are staying in Piano do Sorrento. Thanks!
What's available for shared tours is on the webpage, and it doesn't show any 1/2 day or night tours for Capri.
I don't recall that much was closed on an October Sunday in Sorrento - when we were there, and the month you look to be going - outside of restaurants which have regular closing hours. Depending on how late in October your trip is, things could be starting to winding down for the winter, though. Capri can be is easily done on your own from Sorrento using the ferry system BUT the last boat leaves the island relatively early:

A night tour (after dark) really wouldn't make any sense for that one, IMHO, as the views are a big chunk of the island's appeal. Staying on the island to enjoy the after-dark, lighter-crowd evening ambiance is another story, though.
Editing to add: looking at the full-day shared tour for Capri, virtually all of the time allowed for the island itself (4 hours) is independent - no guided tours, attraction tickets or ground transport included - so I'd definitely do that one on your own versus a tour. I wouldn't choose Capri if the Blue Grotto is your biggest or only reason to go as access to the cave could be sketchy in late fall, it's time-consuming and expensive for the few minutes you're inside (if the rowboats can even get inside: I see that they can't today), and it's the LEAST of Capri's charms, IMHO.
In my opinion, a half day for Capri doesn't make much sense, especially given the time it takes to get there, to get from the marina to Capri town, and to get back to the mainland. We did it as a day trip from Sorrento, and I wished we had stayed overnight.
Both of these are easy to do on your own. Kathy gave you the scoop on Capri, here's the best way to do the Amalfi coast at your leisure.
Bus (30 min) or taxi ( 10-15 min) to Sorrento.
Shuttle bus to Sorrento port.
10min.
Ferry to Amalfi (1 hour) head directly to Ravello by bus (30m)
Return by bus to Amalfi.
Explore, when finished, take the ferry to Positano (20m)
Then ferry (40m)or bus (1hour) could be longer dependent on traffic, last year it took us 2 1/2 hrs, back to Sorrento.

For Capri take the ferry from Sorrento (20m) head up to AnaCapri first. The beauty of the island is seen up here.
You can spend either a half day or a full day on your own.
Try to purchase your return ferry tickets to Sorrento as soon as you arrive in Positano.
That way you're guaranteed a spot on the boat.
There is no way a half day trip works for Capri. Most of your time would be spent on frerries going to and from Capri.
