Does anyone know if the prices quoted in Rick's book include gratuities? Thanks for your help!

Rick's books don't "round up" a price to include an estimated gratuity. I expect the company will quote you the same prices that are in the book, leaving optional gratuities up to you. Since they are private operators working for themselves and setting their own prices (€300-400 for an 8-10 -hour day), I would not be inclined to tip.
