We have visited a couple of times before, always staying in Sorrento. This time we would like to stay in Vietra sul Mare. Looking for suggestions, preferably not a large hotel. We prefer a bed and breakfast or even an Agriturismo.

Doubt there will be an agriturismo, as its mainly a seaside town built on the side of a mountain, but it is nice and quaint! Very close to Salerno by bus if you want to go anywhere by train, and they do have a travelmar ferry! https://www.travelmar.it/it/orari-dal-13-gennaio-2024
I hope people have recommendations for you, but I have always stayed in Salerno and taken a Salerno city bus to Vietri after my visits to Paestum (to fill up the rest of the afternoon). It would definitely be a nice place to stay, but I wouldn't want to rely on SITA buses to go out the peninsula as they might be crowded. Salerno city buses are fine, they don't get as jammed as the SITA buses to the coast, except when school is out for the day :)

Both of these options are of course outside the town, but depending on your transport plans and physical ability, they might be options. *** I looked just for kicks, and for the first one, Google Maps indicates a bus route that passes right by and takes you to the ferry port. Always contact the hotel to see if they will arrange a pick up to/from the train station for you.
