Alpe de Siusi Alternative?

My wife, a 10-year-old daughter, and I will be traveling to northern Italy at the end of May. Our itinerary has us spending the first couple of nights in Bologna before going up to Bolzano where we are looking forward to biking a 30k circuit through the Alpe de Siusi. However, current weather conditions at the top of the cable car are white out blizzard, which suggests that rich green meadows and wildflowers will not likely be awaiting our arrival. Looking for alternatives that will give us exposure to the Dolomites on bike perhaps at a lower altitude where the environment will be more spring/summer like. We are not planning on having a car, but could easily rent one if appropriate. All thoughts are appreciated!

This post needs a little editing, as there is repetition. What or where is Bullseye? Is spell check messing with you? Do you mean Bullaccia on the Alpe di Siusi?
Yes, the webcams are showing skiing conditions right now, not biking weather.

A lot can change by the end of May. Wildflowers unlikely but snow melted, pretty likely. Stick with your plan and ask locally when you arrive. Might be good to go, if not the locals will have ideas.
