My wife and I are planning 2 days in Europe starting in Paris then heading to south France for 2 nights before heading to Cinque Terre then more Italy. We are at a loss for where we should stay. We have looked into Arles and Lourmarin and aren't sure what's in the region other than Provence. We want to see Provence and Nice and the beach, other than that, I don't know. So, where should we stay and should we consider renting a car in the area? Thanks!

Provence pretty much is the region. There's endless things to see, though. You should definitely rent a car to tour the area.
Can I suggest getting hold of some RS books and having a scan through them.... I think all those questions would be answered there....
Arles, stay there, or skip Provence and go to Antibes which is much nicer (cleaner) than Nice. Nice isn't a great place to visit. I think you're planning far too much for just a couple days, you'll be travellnig most of those days.
As Nigel said a RS guide book "Paris and the South of France" will give you lots of ideas.
