What happens on All Saints Day in Florence? Will the tourist sights be more crowded than usual? I'm not Catholic and am totally unfamiliar with this special day.

It will be business as usual. Italy is religous in name only.
All Saints Day is November 1st (the day after All Hallows' Eve). You mean the feast of St. John the Baptist. As it falls on a Sunday this year, I don't think any place will be more crowded than usual.
