I'm looking at a flight to Italy on AirOne and was looking at thier site which provides little info of what to expect onbaord. I'm just wondering if anyone can enlighten me as to what to expect? Food service? Entertainment, etc? Just would like to know in advance what we would need to occupy and feed ourselves with on thie trip.

AirOne is a Lufthansa subsidiary if I remember correctly. They just started flying internationally (they mostly did Italian domestic and intraeurope before then). I would guess standards of service and care are therefore similar to Lufthansa's transatlantic flights, good but not great.
Air One website shows a toll free passenger information number from USA: 1-888-9-FLY-AIR1. Might try giving them a call with your questions.
I would be very careful with Air One. I booked a flight between Rome and Toulon France back in February for a flight in early July. Everything was confirmed and my credit card was charged. Since our trip is getting close, I just double checked my itinerary and found that they had changed my departure date and never notified me. When I called to check, they said they were not going to fly on July 9th, so they changed the date. I was not notified of anything and now we have to find an alternate way to get to our destination. I am now in a big hassle with them trying to get refunded since they canceled the flight. I have to send a registered letter with all the information and then they will consider refunding me. Frustrating to say the least.
