Check out Il Palagio (www.infochianti.com) directly bewteen Florence and Siena. I've stayed there twice - clean, luxurious, convenient. Incredible views.

We recently stayed at Podere La Fornace in Tordibetto, just outside of Assisi. It's a lovely place with spacious grounds and even a swimming pool. Good wine, as well! www.lafornace.com
