Agriturismo in Central Italy that is a Working Sheep Farm?

Hi, I'm looking for a comfortable place to relax and learn about sheep farming. I'm especially interested in the cheese making process. Can you recommend an agriturismo in central Italy that would offer such an educational and relaxing experience?

I have been to Il Casale (http://www.podereilcasale.it) as someone else put above. That was going to be my suggestion. We didn't stay there but visited the farm. It is family run by Ulisse, his wife and 3 boys. We took a cheese making lesson with Ulisse while we were there. You name it the farm has it (except cows) We also had lunch on the farm, and it was my favorite meal in Italy. Everything by the balsamic vinegar was made on the farm. We had about 12 different plates of food. Some dishes I remember were: farro salad, salami, prosciutto, beets, fresh ricotta, eggplant with oil, warm cabbage & carrots, warm cece bean salad, durham wheat pasta with pesto and ricotta, 4 sheep milk cheeses and 3 goats milk cheese, wine.

You can stay on the farm. It's close to Pienza, Montepulciano and Montalcino that you can take day trips to visit too.
