As I recall, the Jewish Quarter isn't far from Trastevere, so you could stay there. I don't know of any B&B's in that area, but would highly recommend Casa San Guiseppe. Although it's a hotel, they serve breakfast so it's essentially a "B&B".

How many people are staying in the accommodation? There are many apartments to rent in the Jewish ghetto. VRBO or any of the other common rental sites will list them.
I always highly recommend this area of town. You won't be disappointed.
The Jewish Ghetto is very small and you would probably be staying nearby but not necessarily in it. My understanding is not many Roman Jews still live there although they do meet and congragate there. By staying across the river in Trestevere you would cross "Jews Bridge" to get to the city as was done historically by Jewish Romans who were not allowed to live in the city untill the creation of the Ghetto.
I am looking forward to seeing the Temple (arrived to late for a tour last time) and spending more time there on my next visit. I also highly recomend visiting San Pietro de Vicoli (St. Peter in Chains) church to see Michelangelo's Moses which I found very moving since I personally experienced someone seriously questioning if Jews had horns when I was younger and the statue is the source of that misnomer.
Some sources say that Michelangelo's "horns" on the Moses at San Pietro in Vincoli are supposed to represent rays of light, a sign of God's favor; haloes were reserved for Christian images.
My friends rented an apartment in the Ghetto a couple of years ago and loved it.
When you visit the Synagogue, watch the short film. Rome has the oldest documented Jewish community in Europe.
Check out the Hotel Arenula. It's just a few blocks away. We stayed there a few years ago. Pros - neighborhood, reasonable rates, cleanliness, OK breakfast. Cons- lacks atmosphere. VRBO had a few apartments in the ghetto area.
