Are there other websites besides Airbnb, Booking.com (and similar) for accommodation rentals in Italy? We are looking to book travel next summer and are finding less than desirable options through those websites. Typically we always have numerous good options when using those websites, but for some reason there aren't many good options for Italy.

One of Rick's recommendations is to contact hotels directly, which is more cost effective for the hotels. I begin with Rick's guidebooks and Booking.com, and identify likely properties and costs in desired locations, then can use hotel websites directly. "Less desirable options" can mean different things, but costs are up and choices down since the pandemic mostly across the board. I hope the industry continues to recover and become more flexible.
I have an accommodation rental and for the last couple of years I have waited until spring to 'open' summer dates on Airbnb to give returning guests time to choose their dates, and also in the hope of guests contacting me directly. A friend who has a B&B also only opens dates on Booking.com short term for the same reason.
You can also use VRBO. I used them for rentals in Rome and Lucca. For Siena and Assisi I used Booking.com. I found a decent selection on both websites.
