Hi - is it true that Terminal 5 does not open until 7am? Using the 3-hour recommendation, we would plan to be there by 6am for our 8:55am United flight at the end of October???

Being at the airport 3 hours in advance is not necessary in Italy, 2 to 2.5 hours is more than sufficient even for intercontinental flights.
Please check if your check in is indeed in T5. The terminal T5 was closed down last February for remodeling and all check in positions located there were moved to the other terminals. I don't know if T5 has reopened already, but it doesn't hurt to check before you go there for nothing.
Lots of people recommend the FCO Hilton that is right at the airport. You could always have dinner in Rome then head down to the airport to sleep.

Today's United flight 41 to Newark left from Terminal 3. According to the FCO website United flies out of T3.
