This is my firs trip to Italy. We are doing the 7 Day Rome Trip and have a couple of days with no tours scheduled. Any ideas on what to do outside the city of Rome that has easy access. To get there and back in same day. Is Tuscany a duable trip?
Are you planning on doing the 7 day Rome on your own ? Or is this an RS Tour ?
If it's an RS Tour, you may only have evenings and afternoons open for free time, not 2 days.

Orvieto is a "hill town" in the Umbria region.
It is about one hour by train from Rome termini.
The Duomo is really a sight to see. It is fun walking around and visiting the restaurants or the shops along the little winding streets.
You could see quite a bit in a whole day or you could spend an overnight there.
Orvieto probably doesn't stay open as late as Rome would with the hustle bustle of city life.
Orvieto is known for its Classico wine, if wine interests you.
There is a really sweet lavender shop if you like lavender - all authentic.

Tuscany is far: 90 minutes by train to Florence and longer to drive even to Montepulciano, for example, which is closer. Most Tuscan towns do not have easy train access.
Suggestions for a reasonable half-day or full-day: Orvieto, Castel Gandolfo, Tivoli (visit Villa d’Este), Frascati.
While in Rome in December 2018, I rode the train to Orvieto for the day. I enjoyed the cathedral and the town immensely. In my view, perfect distance from Rome for a day trip.
