First CT is an area and not a town so you need to pick which town you want to go to. Go to trenitalia.com and plug in your starting and ending and it will give you the schedule. Most likely you will connect in Milan and perhaps one other location depending on which town you want. Other than some discounts, there is no advantage to making reservations ahead of time.

Use the Trenitalia website to find the schedule. the easiest one is probably the 10:37 departure from Varenna, which arrives in Milan to connect with the IC 665, which goes to Monterosso al Mare with no additional train changes. At Monterosso you change to the regional train that stops in all the villages-take your pick. Trenitalia has you leave the IC at Sestri levante and change to the regional train thaere, That will save you a few euros, but I think staying on til Monterosso al Mare is simpler. It is up to you. You may need to buy your tickets from the travel agent you will find on the path going to the Varenna train station. When we were there last June, and as I have heard more recently, one cannot buy tickets at the station in Varenna.
