Hi - I'm planning a trip with family of 6 to Tuscany. The 2 must go cities are Florence and Cinque Terre. How many days would you recommend to stay at each city? We are not big museum person and mainly care more scenic and wine.

Without museums I would recommend 4 days Florence. And 2 days Cinque terra.
If u find us still!have xtra time in Florence u can go to Siena by bus for the day.
Or take a bus to Fiesole for the beautiful views just outside of Florence.

We did a similar trip last year with 6 people, two college-aged girls. We spent 2 nights in the Cinque Terre and 3 in Florence and 3 in the Tuscan countryside. While I loved Florence, the rest of my group would have preferred to spend an extra night in the Cinque Terre (they are not museum people).
If you spend 2 nights/2 days in the Cinque Terre, you can divide time between hiking, visiting the 5 towns, even wine tasting. One of our favorite parts of the trip was reserving a boat and taking a sunset cruise, we took Fish & Chill: https://www.cinqueterreboat.com/. Diego is a wonderful host and while our trip was cut short due to weather, we truly enjoyed the time on the water. With two days, all we could realistically do is to visit the towns and take the boat trip.
As for Florence, even if you don’t enjoy museums, you may find the Duomo museum a treat. Of the group I was with, my group who grumbled through the Uffizi, loved this museum as it showcases art, architecture and Christian relics. My group also enjoyed climbing the dome. It is quite a hike up, but the views are beautiful. We went on a Sunday afternoon in June (really hot), I would recommend a morning climb. The other highlight of Florence for our group was the Sunset food tour: it was great introduction to Tuscan culture. I would recommend taking the tour the first night as they provide good recommendations that you can use the rest of your trip. Here is the link: https://www.eatingeurope.com/florence/.
As for wine tasting, we had a car while we were in Tuscany, but I know that there are tours that take you wine tasting and/or cooking classes and you can see reviews and options on Trip Advisor.

Do you have 6 day/7nights? The reason I ask is that your usable days for sightseeing and hiking are defined by how many nights you have. 2 nights = 1 full day. Arrival and departure days are, at most, partial days.
If you are not interested in museums, I would say no more than 3 nights which is two full days, plenty if you are not into museums. It will take you most of a day to get to the Cinque Terre from. Florence allowing time to check out, transfer, check in, get settled. 3 nights is, IMO, the minimum stay so that you have 2 full days to explore and enjoy. If you have 7 nights then make a list of what you would do in each location and decide which would be the best use of your time.
