My wife and I are going to Italy the end of September. I booked a hotel in the town of Amalfi for 5 days thinking that would be a good central point. But after reading many posts here I'm thinking of splitting time between Sorrento (and doing a few day trips around the AC) and Capri. Any thoughts on one or the other? of course hotels are slim pickens right now.

Hotel may very well make the choice, but you can still visit Capri if you do not stay in Sorrento, so I would not let that be the determining factor. I would only stay in Sorrento if the intent was to also go to Pompeii and Naples from there.

It depends on your sightseeing priorities. Basically, day tripping from one side of the peninsula to the other is suboptimal (though thousand of people do it everyday.) In a straight choice, I’d stay in Amalfi. To see the Amalfi Coast properly, I think you need to stay ON the coast. Literally all the traffic on the road are people day tripping in and then out. Avoid that melee and your stay will be a dream. Day tripping to places like Positano or Ravello are a relative breeze from Amalfi.
Sorrento is best if your sightseeing plans include Naples/Pompeii/Herculaneum. If it does, then it’s probably worth splitting those 5 nights. While I enjoyed my day in Capri, I didn’t feel like I was missing out by not staying there. And day tripping off Capri would be a total drag.
You may be too late anyway to try and find something in Sorrento. As mentioned above, if your plans include the Vesuvius excavation sites than some time in Sorrento makes sense. If it's just the Amalfi Coast then I'd stick to Amalfi Town and save yourselves the hassle of an extra round of transportation.
