We will be renting a car in Rome and would love suggestions on which 3 provinces to stay excluding Florence since we have been there. Also suggestions on day trips from these provinces. We will be visiting in October.

This is a very broad question so help us focus.
What do you like to do when you travel? Focus on history? Hiking? Art? Wine collecting? Will you want three one-week stays using the location as a hub for day trips?
I personally would start with a good guide book and read a bit about the other provinces in Tuscany to see which ones appeal to me.
