Hello! We will be arriving in Rome via cruise ship on Saturday, April 20. We are also going to extend our trip after the cruise and retrun to Rome for an additional 2 1/2 days. Being as the first day is a Saturday, any suggestions for which sites to visit on that short 8 hour day? I thought we might do the Colosseum, Roman Forum and Pantheon and save Vatican City sites for when we return at the end of the cruise. Also, any suggestions for hotel in Rome, in the 250.00 range...

Do the Forum and Colosseum on the short 8 hour day. That will be all you can realistically do with an 8 hour shore time. Time will be taken up getting off the ship, and again on the ship, plus transportation time to and from the ship. Set aside a day for the Vatican, St. Peters, Sistene Chapel and the Vatican Museum. There is so much to see there. You can probably do the Pantheon on that same day/evening. Really, set some relaxing walk-around, drink wine, sit in a piazza time!!!
This could be done at the end of your trip while you wander through Piazza Navona, and Campo di Fiori. Don't forget to go to the Trevi Fountain and throw your coins in, because if you do Rome correctly, you will definitely want to return! Don't rush through and just check off boxes.

hi, you might want to try a hotel and look on venere.com or booking.com i think that a lot of self catering apartments have a 3 night minimum. at least that has been my experience.
