Why not stay in Fiumicino, the little beachside town right at the airport? Many hotels there will have a shuttle to and from the airport, or you can take a 10-minute taxi ride for very little. You can spend your last night in Italy with a walk on the beach and dinner at a little local restaurant.
We booked this one for an April trip but had to cancel. I would choose it again. It is highly rated on Booking.com (8.8 or “excellent”) and you can book there if you are not comfortable with the Italian website.

We stayed at the Alberto del Senato (Rick Steves recommendation) and loved it! Across the street from the Pantheon, a short walk to the Spanish Steps and Trevi Fountain. Fabulous staff and great breakfast.
