2 weeks Mid May in Italy - one week free

We are going to Italy mid-may 2014. Traveling to Rome and then will spend one week in central Italy for a culinary holiday. We then have 7 days available until we fly out of Rome. Instead of trying to cram in a lot of sightseeing we'd like to find one place to stay (first choice Northern Italy but not sure of travel time) and travel from their by car for day trips. We're pretty laid back and don't require night life but mainly want to relax and get to know the culture. A small town to explore would be great. Since I have no idea what it's like to get around in Italy is heading up north even a good idea for one week or should we stay in the more central area? Any input greatly appreciated!

Not sure what you mean by central Italy, but on our upcoming May trip we have one week in Tuscany and then have another 6 days before leaving Italy. We've decided to head to Bologna and Verona as I've always wanted to see them but have been busy seeing the "important sites" first. From the little I've read I know there are lots of places we can explore including Ravenna, Parma, Padua - so we're just going to play it by ear once we get there.

By fast train, it's only 3-4 to Rome from either Milan or Venice. You could easily spend a few days relaxing at the lakes, eat fabulous food in Bologna, check out the LastSupper in Milan, see an opera in the roman amphitheater in Verona, or take a gondola ride before heading back to Rome.
