I have a couple of long weekends in May and would like to find a cooking class for 2 or 3 days located somewhere between Milan and Florence. Most classes I found online are for a week or more.

If you will have a car, many of the agriturismos advertise cooking lessons as one of the amenities they offer. Most agriturismos rent only by the week, but many rent by the day, some with a minimum stay of 2 or 3 days.
With a little looking you can surely find a place with the combination of factors you need: between Milan and Florence, offering cooking classes and room or apartment rental for 2-3 days. Most of them give contact info (e-mail addresses, for example) to let you contact them and ask questions about what lessons they order.
