We are renting a car in Florence and have 2 nights to spend in Tuscany before heading north. Any suggestions on where to go to get a taste of the area. We are not big wine drinkers so more interested in scenery.
The Val d’ Orcia area is the classic Tuscan scenery you are likely looking for
Pienza, Montepulciano etc

San Gimignano.
Since you're not big wine drinkers, I'd focus more on the landscapes, villages, and local culture than winery hopping.
If you're spending some time in Florence, I'd highly recommend a food tour (https://toursoftuscany.it/tours/florence-food-tour/) to get a taste of Tuscan cuisine and discover some places you might otherwise miss. For scenery, I'd spend a day driving through Val d'Orcia around Pienza and San Quirico d'Orcia. The rolling hills, cypress-lined roads, and viewpoints are pretty much the Tuscany you see on postcards.
One thing I'd personally skip is trying to squeeze too many towns into two days. A lot of people rush through 5-6 places and end up spending more time parking and driving than actually enjoying Tuscany.
