I will be traveling with my adult son and need 2 separate bedrooms. I am having trouble finding apartments with 2 bedrooms as I think that would be cheaper. But I can only find bedrooms with double beds. Any help/

A two bedroom apartment would be cheaper than two hotel rooms and there are loads of them in Italy but first, which cities do you need them in and on what dates?Are you sure you couldn't share a hotel room? I ask because we travel with adult kids and relatives and stay in one room. We change clothes in the bathroom or take turns stepping out of the room or into the bathroom so others can change.
Even a one-bedroom apartment might have a pullout sofabed. For hotels, I suggest checking booking.com for photos of hotel rooms, look for "suites" and see if that will work. You can also look at apartments listed.
I have traveled with my adult daughter several times and never had a problem finding a two bedroom apartment. Many sites such as HomeAway and VRBO allow you to filter your search and just look at two bedroom apartments.
An apartment is so much better than being crammed into the small hotel rooms you find in Europe. I'm also very convinced even a two bedroom apartment will be much cheaper than a hotel.
If you can give me an idea of where you will be going, I might be able to give you more specific ideas of what sites to search for apartments.
I'm sure there are tons of 2 bedroom apartments (or one bedroom with sofa bed) - well in cities, maybe not so much in smaller towns? What cities do you need? We always use vrbo.com. I will only rent ones that have multiple good reviews.

Along with VRBO and Home Away you can also use airbnb.com which allows you to filter for the number of beds and bedrooms. I sometimes travel with my 17 year old son so I use the filters to make sure we both have some privacy and are comfortable. From the pictures of the unit you are renting, you can also quickly tell if you are getting what you want.

When it shows the price, is it for the total or for the single night for one person.

It is per apartment......on airbnb I know they build in charges per extra person, but what you see is what you get price-wise if you search for the correct # of people....
Booking sites usually show the price for the accommodation, for example, on booking.com there will be silhouette figures of the number of people the room/apartment will accommodate, with the price per room/apartment.

In Turin I suggest you check hotel genova, it is near the Station Porta Nuova, very nice hotel and lovely staff. They are featured on booking com and their prices are ok. very nice staff.
I would also try homeaway.com
And consider looking at one bedroom apartments. We have stayed in numerous one bedroom apartments that have a sofa bed which your son could use. They are more easily found and usually significantly cheaper than two bedroom apartments.
