13 days in Chianti region :)

Hi, planning a trip to Chianti region, flying into Pisa early enough to spend the day and then go to Florence - bus? Staying in Florence for a couple of nights... I have heard that everything is pretty much shut on the Monday, is this the same for the Sunday too? Then into the Chianti region... would prefer to do it by bus, but from reading info seems that a car would be the best option? I really need help on where there are very cheap, simple places to stay in the C region, any help would be greatly appreciated and any advice, so far I have Greve and Sambuca and all inbetween on the plan, then Siena

you can take bus or train from Pisa to Florence train takes about 1 hour I'd give Florence at least 3 nights most of Tuscany is best travelled by car so if you choose not to rent car or hire a driver you will have to work out the logistics of getting from place to place
Siena is beautiful and an easy bus ride from Florence

Thank you for your help... think we'll be hiring a car, as much as I am sure my partner would like to cycle the everywhere (he's just done the camino da santiago) so my main thing really is to find hostel style places to stay or local rooms to let... don't want fussy places, just bed and table outside for views and of course wine :)
