12 days for Sicily with side trip to Malta/Gozo - will I regret skipping Trapani/West Coast?

I am a solo traveler and will be heading to Sicily in mid-May. I will be relying on public transit/taxis so that's a big factor in my planning. I really enjoy architecture/ruins/history and being in nature, love the ocean. I've planned to end my trip in Malta, but in order to do that I haven't figured out how I can also fit in going to Trapani and surrounding areas. I really want to see Would anyone be able to give me feedback on my tentative itinerary? *nothing has been booked yet so I am very open to suggestions *

Day 1: arrive Palermo in afternoon
Day 2 & 3: Palermo - day trip to Temple of the Valley and (hopefully) cooking class with the Duchess
Day 4: Train to Taormina OR Catania, may stop off in Cefalu
Day 5: Mt Etna
Day 6: Train to Siracusa
Day 7: Ortigia
Day 8: Train to Pozzallo/Ferry to Malta
Day 9-12: Malta/Gozo
Day 13: depart Malta in morning

Trapani and west coast are more difficult without a car. I would not worry about it as it is hard to see Sicily in one trip unless you have at least 3 weeks. We had two and will have to return.

Personally, I think you are giving Sicily short shift. You have maybe a half day to see Palermo with a day trip to the Temple of the Valleys and a cooking class.

You have very limited time in Taormina/Catania and Siracusa.

I would slow down and add some of the Baroque towns like Noto, Moderna or Ragusa which can be reached by train. Skip Malta this trip.
