Just wondering how available ATM’s are on Sicily, and would we have time to access them during the tour, or should I plan on bringing euros?

ATMs serve the local population and they are as available there as they are here. Bring Euro if you like but recognize that you will pay a premium in the exchange rate. The best exchange rate is always the local ATM. You might consider having a hundred Euro in your pocket on landing just to get through the first day but no more.
It would be helpful to have some Euros on hand. There were a few cafes and pastry shops that did not accept credit cards. As Frank stated, €100 should be more than enough.
I spend a whopping 58€ in cash on the sicilian trip. 15 of these where for a taxi from the train station back home and return because I forgot my passport.
So 100€ should be enough and if not it is as others said atm are plenty.
