1.5 days in Bolzano - car rental?

We want to make the most of our short time in the Dolomites. Should we rent a car to be able to drive around the loop to see more of the Dolomites or is there public transportation that we can use to do this? If car rental is recommended, is it possible to rent a car on a Sunday?

Cable car recommendations?

If you are there on a Sunday you will absolutely need to rent a car to make the best of your short time there. The public bus schedules in the Dolomites on the weekend, especially on Sunday, are very limited so it will be much harder to get around than Monday through Friday.
There is a branch of Maggiore rental car in Bolzano that we have used before but I'm not sure if it will be open on Sunday. I included their English website so you can look up the date you want to be there. I suggest you look up some of the threads on this website about some of the pitfalls of renting cars in Italy and what you should do to avoid problems.
There are some great cable cars you can ride to see some amazing views...our favorites are the Seiser Alm from Ortesei, the one that goes up the Marmolata - breathtaking! - and the one that goes up to the Langkoffel Gruppe. Pretty much any lift or gondola you ride in the Dolomites is going to provide with amazing views!

I would rent one. However I checked 4 companies in Bolzano (Avis, Europcar, Hertz, Maggiore) and they are all closed on Sunday. You need to rent Saturday mornings. Actually unless you rent at a major airport or a major rail station, you are unlikely to find rental places open on Sundays, in Bolzano or anywhere else.
