Staying at Towers Hotel Sorrento with a Rental Car... Advice?

Me and my husband have booked a trip to Castellammare di Stabia at the Towers Hotel Sorrento (9/1/15 thru 9/9/15), and the trip includes a rental car. We will be driving from the Naples Airport to here, and have already decided against using the AutoStrada and instead going the long way around Mount Vesuvius.

After reading a lot of articles, driving is not advised for the Sorrento, Positano area. However, There is only 1 shuttle bus from our hotel to get to Sorrento and back. We could also take the hydrofoil from our hotel to Capri, Sorrento and Positano (I think).

We would love to be able to drive the coast, as we are very proficient drivers.... any advice to get to Positano to spend the day?? We want to eat!!

I stayed there a number of years ago when the hotel was called the Crowne Plaza.

We had a great time and I gave a TripAdvisor with a very nearly perfect score.

The only thing - it can call itself Sorrento but I can tell you that it is neither in nor very close to Sorrento.

We loved the location but we needed to get the car out anytime we wanted to go anywhere.

One of our favourite moments was discovering their breakfast ... I'll let you discover the details.

A warning - be prepared for the driving at the crossroads in Castellammare di Stabia. My wife still tells stories about her level of fear as I drove slowly through. There is traffic from all directions and no rules.
