If you’re staying at the Ambasciatori, it’s a short walk to Via Vittorio Emmanuele. There were 2 restaurants that we enjoyed: Buatta Cucina Popolana at #76 and Cagliostro Ristorante at #150. Great food, great service, reasonable prices. And there’s a bank ATM on Via Vittorio before you get to either restaurant.

sallymoxley, if you are staying at the Ambasciatori, there is a cluster of bar/restaurants in the Piazza di Rivoluzione that's kind of behind the hotel, where you can get "appertivo" - basically small tapas-like plates of different food items or antipasto earlier than normal Italian dinner-time (which is after 8:00PM). We just could not adjust to eating that late, so looked for earlier eating. Also there was a trattoria just down the street (to the left from front door, at the corner) called Laconda, that served a good pizza as well as the usual other things, and was willing to accept a group of Americans for early dinner (6 PM). It was just starting to fill up with locals when we left at 8:30.

If you're not at the Ambasciatori, there were plenty of options around the Quattro Canti area, but really almost every street had some interesting looking places.

We were on this tour in April 2016, and stayed at the Tour hotel (Ambasciatori) before the tour. Dinner on the night of our arrival was at Ferro di Cavallo - Via Venezia 20. We enjoyed the food and atmosphere.

I appreciate all these responses. We are indeed staying at the Ambasicatori so all the suggestions are appreciated. JS, I made a note of food item "caponata" and will be on the lookout for it. Philip, besides the several restaurant suggestions the bank ATM info is helpful. Donald, I am from Anthony and KSUalum so excited about Cat BB. Stan, your many suggestions will be put to good use. Bob, it will be interesting to see if introductory dinner is at Ferro do Cavallaro. There have been so many RS Blog postings about street food tours in Palermo I feared never sitting down to dine! Stan, we also prefer to dine before 9pm.
Our guide is Stacy G. Was she anybody's Sicily guide?

THere's good street food at the Vucciria Market, just up Via Roma from the hotel. (It's off to the right, down a flight of steps. Ask at the hotel. Or you can enter from Piazza San Domenico, head back toward the hotel.)

L'Cova dei Sapori at #101 Bara All'Olivella. Good, fresh seafood; entertaining host. Huge portions, at least for some items. On one visit I had the seafood risotto and couldn't even come close to finishing it. The owner goes to the dock every morning to meet the fishing boats and select the day's specials.

There's a tiny trattoria La Provenda just south of the hotel on Via Roma, tucked back from the road a bit. I had excellent (and cheap) fettucini con funghi there. Very simple, wonderful.

We all enjoyed Il Mirto e la Rosa, Via Principe de Grantelli, 30.
Small, brick arches in interior plus outdoor seating. Caponata, best I have ever eaten. Wonderful Pasta con Sarde, a classic Sicialian dish. Delicious. Fabulous Cannoli for dessert, the lightest I have ever eaten. A winner!

There is an excellent trip report by LiztheMadHatter on a recent RS Sicily tour, here on the forum (under Trip Reports), that may give you some other tips for the tour.

I don’t remember the names of the restaurants I went to but I never ate badly in Sicily. Just follow your instincts and eat fish fish balls fish grilled, cooked, baked, whatever.
And also pasta alla Norma
and veggies specially eggplant and tomatoes
Also eat cassata, juicy oranges, Sicilian oranges and lemons are the best in the world.
Drink almond milk, the true genuine one
Eat fresh pistachio and pistachio paste both salted and sweet and you’ll be fine.
