Restaurant recommendation

My wife and I are arriving in Florence end of August. I would like to get a recommendation for authentic bistecca fiorentina? My only requirements is that I want a place where locals go with better quality meats. I don’t want a touristy place I prefer authentic Italian. I hear going to the Oltrano area is best but there’s still so many choices.

Recommended in earlier threads on this Forum, the Antico Ristoro di Cambi is an institution in the Oltrarno. We went there years ago, and it was very good. Rick Steves has recommended it, so it might not be strictly locals in there with you, but it’s also far from touristy.

We recently returned from our July Italy trip. In Florence we stayed 3 nights at the Hotel Maxim Axial on Via dei Calzaiuoli, just a few minutes' walk from the Duomo. At my request for a good, non-touristy, nearby restaurant for bistecca alla Fiorentina, Sabrina (at the reception desk) recommended Agricola Toscana, (agricolatoscana.com) which was only about a 5 minute walk from the hotel and from the Duomo. Turned out to be one of the best dining experiences of our 18 day travels through IL Bel Paese. Adriana, who was in charge, welcomed us warmly. Our big t-bone was brought out for our approval before it was cooked "al sangue" (rare), the only way they cook it! After a short time it was presented already neatly carved and accompanied by perfectly roasted potatoes. Absolutely delicious, perfectly prepared, beautifully presented, top quality food in a relaxed, unpretentious, warm environment in the heart of Firenze. Everyone on the staff was very friendly and attentive. Would go back in a heartbeat. Wish Agricola Toscana was located where I live! Grazie mille to Sabrina for recommending Agricola Toscana and for calling and ensuring we got a table, even at close to last minute.

Trattoria La Burrasca The Florentine steak served at this modest restaurant is terrific! I sensed several locals were also eating there.
