We plan to stay in Palermo for one night after traveling around Sicily for two weeks before heading to Rome where we have a flight at 11:40am. Is it reasonable to think we can stay in or near Palermo and get to the airport in time for our 7:30am flight to Rome? If so, any hotel recommendations?

I prefer to sleep in my departure city the night prior to my flight home.
What if your flight from Palermo is delayed and you miss your flight home?
Too risky, IMO.

If the PMO-FCO is one booking and the FCO-USA is a separate booking you have more optimism, nerve and ice water filled veins than I. And hopefully a fatter wallet.
If you have a single booking PMO-FCO-USA, then you have protection if you miss the flight from FCO
I agree with Priscilla about sleeping in the departure city the night before.
It would not take a very big bump to upset your cart
