I need recommendations for restaurants in Florence and Rome that have good chicken or seafood dishes. We need more than pasta and steak on our trip.
You need not fear finding only steak and pasta on a restaurant menu anywhere in the country.
We have two two favorite restaurants in Florenece.
Giglio Rosso located at 35 via Panzani. Their web site is https://www.ristorantegigliorosso.com/en/about/.
Olio & Convivium Gastronomia Restaurant. It's on the Pitti Palace side of the river on Via di Santo Spirito. Wonderful atmosphere, excellent food, and good wine. A bit pricy, so you might want to try it for lunch rather than dinner. The web site is https://oliorestaurant.it/.
Both of them have a number of dishes that aren't pasta and / or steak base.
You should be able to check out the prices and such on their web sites.

I’m not certain I’ve ever had either chicken or fish in Rome, but one non-pasta and non-steak Roman specialty is Suppli, fried rice balls with cheese inside. Of course, there’s gelato as well, although neither of those are necessarily main courses. Then there’s Roman pizza …
Rome- seafood, La Rosetta near the Pantheon. Excellent.
This excellent Trip Report has some good restaurant recommendations, as others have said zero problem getting chicken, you could look at the menus on line for seafood.

BEST meals & treats we experienced over NY - All of these will have at least chicken, check menus on line for seafood.
Bocano, housed in a former bank, not cheap but elegant and nicely situated close to Trevi Fountain.(Open all day and no need to book ahead.) It's on the expensive side, but service and food are great. If you're there by 12:30, no need for a reservation. Ditirambo- near Campo di Fiori, you can make reservations on line and it opens early for dinner, which was a plus for us. REALLY fun waitress, blue hair, fluent English. Great Roman classic menu. www.ditiramboristorante.it/
Piccolo Vicolo next to our hotel turned out to be a gem. The best pasta of the trip, AND they had amazing salads as a main course.
Osteria de Sostegno, near the Pantheon, was our absolute fav but didn't get there this trip. MUST reserve, or show up when they open for lunch, haven't been for dinner. https://ilsostegno.it/
