Multi-course tasting menu in Tuscany--need recommendations!

I need recommendations for a restaurant that serves an outstanding quality multi-course tasting menu.

Many years ago my daughter and I had dinner at a small restaurant in Corsignano outside of Siena. They offered us a tasting menu that was about 7 courses, and it was one of the best meals I've ever had. They modified their standard tasting menu to meet our vegetarian preferences, too. I particularly remember the cheese course--it was just one of the many courses, but could have been a meal in itself, with several kinds of cheese and various sauces to pour over them. Sadly, the restaurant, Osteria Nonna Luisa, closed a few years ago. I'm visiting Tuscany with my wife and would like to recreate that experience at another restaurant. I've googled and looked through the Rick Steves formum as well as his Italy guidebook that I bought recently. I'm not having much luck. A lot of search results are for wine tastings, not food tastings. And of the latter, most seem to be limited to just 3-4 courses. We want a place that offers many small plates of outstanding quality food and don't mind paying for it. I did find a place on the Campo plaza in Siena but it looks geared to tourists and I doubt will recreate the experience I had at the small family-run osteria in Corsignano.

Any recommendations? We are based near Siena. Would prefer a country place but the city is OK too. Would like a place that is passionate about their food and in sharing it with customers with enthusiasm.

You may get more responses under the Italy section- this is for reviews. Overall, I don't think there are a lot of gourmet eaters here- am I wrong?

I’ve dined twice in Florence at La Leggenda dei Frati - a superior experience at a restaurant with a Michelin Star. https://laleggendadeifrati.it/en/

Besides their outstanding tasting menu (vegetarian option is available), they’ll take you up the elevator for a view over Florence from the rooftop of their building. They’re located on a hill on the Oltrarno side of Florence.

I don't think there are multi course meals, but we really enjoyed Cibreo in Florence--there's both a restaurant and a lower-priced related trattoria. I've eaten at both and would happily return.
