Since you didn’t give any parameters as to cost or type of lodging here are two places I have stayed, that are budget friendly, smaller places, not full service hotels, and are well located. In Taormina take a look at B&B Evelyne
It has just a few rooms. Breakfast is upstairs (2 flights) on a covered terraza. Evelyne, the Owner, was very friendly and helpful. AC. Not far from Taormina communal gardens which are lovely and have great scenic sea views. Also close to the beautiful ampitheater.

In Palermo look at B&B Palazzo Pantaleo. This B&b is well situated in a historic old palazzo, very close to the Teatro Politeama and the Opera house , Teatro Massimo. Abundant typical Italian breakfasts. Elevator. Surrounded by shops and lots of nearby restaurants and a straight walk down to some of the main sites near Quattro Canti. In 2019 I stayed a week at a lovely bnb that I would have heartily recommended but it has permanently closed, probably a victim of the covid pandemic. if you do a search here on the forum you will find many excellent recommended options for lodging in Palermo.

thankyou Pat, appreciate your information, and for pointing out how helpful basic parameters can help narrow the search. :)

Taormina- Hotel Villa Schuler- beautiful views of the sea and Mt. Etna. It’s short walk to main section of town but far enough away from crowds for peace and quiet. Nice served breakfast.

We enjoyed staying at Eurostars Monte Tauro a few years ago. Gorgeous views, lovely pool,
wonderful breakfast and short walking distance to main part of town. We spent two nights there. Our tour guide lives in Taormina. If you are interested in a cooking class I recommend Chef Massimo. We were on a culinary tour of Sicily and this was a memorable experience.
Edited to add: On a return trip scheduled for 2020 we were going to stay at B&B delle
Vittorie in Palermo. We had to cancel due to the Pandemic. It was highly recommended by a couple of forum contributors. https://www.bbdellevittorie.it/it/

We stayed at B&B Delle Vittorie in April and highly recommend it. They always responded promptly to emails, arranged car service as we had a long trip to get to Palermo, and have an impressively clean and updated property. The bed was very comfortable with all the amenities (enough blankets & pillows) and they were offering a menu of breakfast options. You selected what you wanted the day before and then it was ready for you the next day. The hotel is located on the pedestrian-only Via Maqueda, but their windows shut out all the noise. There are lots of restaurants in the area.

Our RS hotel in Taormina was Hotel Continental and we loved that one as well. You can access the main part of upper Taormina by descending through the garden and walking down a short flight of stairs. The view from their terrace is breathtaking.

I've also stayed at the Eurostars Monte Tauro in Taormina. No problems. Easy walk into the center of town.

If you want a great Granita.....visit the Bam Bar in Taormina. Just a few minutes walk from my hotel.

We just stayed at and loved Casa Turrisi in Taormina. Central located, clean and comfortable, with very warm and welcoming staff. Probably best value in Taormina. The other commenter didn’t stay there and was angry she couldn’t get refunded since she had last minute transportation issues and booked a non-refundable room.

I will add a restaurant recommendation in Taormina. Our guide, who lives there took us to Da Cristina for the best Arancini we had in Sicily! We had a large meal at lunch so this was an evening “snack.” We stood outside enjoying this delectable treat. My favorite was the Eggplant version. The restaurant was less than a 15 min. walk from our hotel. https://www.tasteatlas.com/dacristina

Thankyou all so very much for your input - I have transferred all to my working list, unexpectedly, many are already fully booked so looks like i will be spending some time in the hunt. Still welcome new recommendations. If it helps, we would prefer to pay less than $250/night and are open to pretty much any lodging type.

We loved B&B Delle Vittorie -- great location and the owners/managers could not have been nicer. they have lots of good recommendations and will make reservations for you. We had a great casual meal at a wine bar in Palermo, CiCala. Inventive food and fantastic selection of wines. Nice if you are tired of eating big meals, as you can order a few appetizers and share pasta or pizza.

In Taormina, we loved Villa Ducale, but it appears the prices are way higher for Fall 2022 than when we were first there in 2019. So, we have booked a suite at Casa Cuseni, which we're really looking forward to because of the history of the house. Plus the terraces look lovely. I think it would fall within your budget.
