Italy Restaurant recommendations

My wife and I will be celebrating our 15 year anniversary and her 40th birthday in Italy. We arrive in Venice. As this is our First time to Italy, where should we soak it all in at Venice to eat?

In Rome where would you recommend for an anniversary dinner?

And for her 40th we will be in Positano for her 40th and where would be a great place for dinner and watch the sunset?

For the places you recommend should I make reservations in advanced? We are traveling from Sept 30th and Home Oct 20th. Thanks

I suggest re-posting this question in the regular Italy forum where it will be seen by more people It may also help to include the names of the cities you're asking about in the thread title.
