Traveling to Italy for the first time with my husband and 20 year old son. Every time we search for hotels, it seems as though most rooms only accommodate two people. I never realized that this might be an issue. I really don’t want to get two rooms to accommodate three people. is this the norm? Am I misunderstanding something?

I always stay in those. Just note that it's usually a double bed and a single bed, sometimes a double sofa bed. Not 2 doubles like in other countries.
Yes looking for a triple. I understand that hotels don’t typically come with 2 double beds like in the states but when I search different hotels and room categories they all seem to say 2 people only even when I choose a Junior suite. I didn’t realize it would be this challenging to find a room to accommodate us.

Yes, it can be difficult, the majority of rooms are sized for two, a third usually means cramming in a cot, OK for a young kid, not for three adults.
You might try starting with Booking.com. They have a wider range of lodging, and specifying a triple will filter out places that will not work. You may need to look at apartments, surprisingly affordable, good for stays of several nights, not so much for one night stays.
Yes, try booking.com where you can search for rooms that accommodate 3 adults, location from city center, desired per-night maximum, desired amenities, etc. Rooms that accommodate more than two are also sometimes called "family rooms."
WHERE in Italy are you going? If you give us the cities your are visiting and your budget, people may be able to recommend hotels that have triple rooms. I visited Venice, Florence and Rome last October with my parents, and I had zero trouble finding triple rooms with actual beds (not a cot to accommodate the third person).

We will be traveling to Venice, Florence and Rome and our price range is approximately $500 per night since this is our first time traveling to Italy. I am not familiar with specific areas but I would like all hotels to be centrally, located with easy, walking to major attractions.
Yes, it is a challenge finding rooms that sleep 3 in real beds without being extremely cramped. For your budget, I would look at two rooms. We have done this with our teens. They typically love the space to themselves. Or YOU may love the space! Having a second bathroom has its advantages.
You might try changing your search to 4 people. This may show what hotels call “family rooms” instead of a double room plus a sofa bed.

Traveled to Venice, Florence and Rome and every hotel I looked at had a triple room. Just put in you have 3 people on booking.com. We stayed Locanda Fiorita in Venice, Hotel Pendini in Florence and Hotel Forum in Rome. The biggest problem with triple rooms is they book up over 6 months in advance because most places have very few of these types of rooms. We loved Hotel Pendini by the way. The others were good but that one was awesome especially the air conditioning.
I use Airbnb when in Italy/Europe. Especially when traveling with family. Everybody gets their own room and you can make coffee in the morning and check your email prior to getting dressed. I do not work for that company in any way just use them when traveling all the time. I find you get way more bang for your buck than you do in a "bedroom" which is what a hotel is to me. As to your question yes there are rooms for 3 persons but it's Europe and the hotel rooms will be very small. J
I have traveled with two friends all across Europe (including Italy) over the past ten or so years. We try to book rooms that have three twin beds. However, sometimes the 3rd bed is quite a bit smaller than a twin bed. It has worked out on my trips as one of my friends is very petite (just shy of five feet tall) so she would sleep in the smaller bed. But for a twenty year old male, depending on his height, that might be an issue. I saw that you have a healthy nightly budget so as someone else mentioned, perhaps getting two adjoining rooms would be the best plan for you and your family.
A couple of options that might work for you. One is apartments (aparthotel, no lobby) and the other is an inn with suites. We've stayed in both of these and can recommend them.

Neither of these are full-service hotels, and neither include breakfast (although both have kitchenettes), though, so if that's what you prefer, these wouldn't be suitable.
Just stayed at Hotel Smeraldo, fantastic location in the historical center of Rome. Room 114 has a strange configuration you might like - a double bed room with bath, long narrow hallway & a segregated small 'study' with a divan that can be made into a bed. That's where all the cupboard space is. 500$ per night is more than enough!! Note the rooms are NOT large. This room was $400 over NY. Good luck!
Hotel Smeraldo was actually on our list but they have no availability the days we are going.
Check out Lancelot Hotel. We have stayed there numerous times in a triple room. Great location close to the Colosseum.
Hotel Museum right near the Vatican Museum Entrance. Stayed on an RSE tour 2 years ago with a sister and we loved it! Quaint, great full breakfast included, and great location.
So this fall my 2 sisters and I were planning a trip to Rome (with a different tour company) and we called Hotel Museum direct and booked a triple room there for only 250 Euros per night for two Post-tour nights. One double and one twin. I will say 3 women sharing one bath would normally be a huge problem on a tight tour schedule, but we figured we could handle it for only 2 nights of leisurely post-tour days. [email protected]
Unfortunately we had to cancel that trip, so now I am planning a Solo Rick Steves tour. Village Italy for me!

Several years ago we stayed at the Hotel Diplomatic in Rome in a triple. It's on the Via Vittorioa Colonna. https://www.hoteldiplomatic.it/en/ Looks like the rooms have been updated since we were there. Easy walking distance to just about everything.
