I did Taste Bologna's morning tour and Italian Days' Parmigiano/Balsamico/Prosciutto tour and both were outstanding.
The Taste Bologna tour is a good intro to the city; you visit a bar, a pasta shop, and a market, then you walk through the Quadrilatero, stop at a wine bar, and finish at a gelateria, snacking all the way.
The Italian Days tour is most of a full day; you visit a Parmigiano factory right as they're making the wheels from the morning milk, have light breakfast with fresh ricotta and balsamico at an acetaia, then visit at prosciutto factory and go through the whole process of curing meats. Finally you finish with a huge multicourse lunch.
We also took Taste of Bologna’s classic tour. We met at 9:30 for the Saturday tour. The guide took us to the market, all these specialized shops, and then we went to this wine bar where you could bring own food. We sat at this big table table. Great fun! Then we finished with gelato stop.
We've done the Italian Days food tour in Bologna, an amazing all-day eating and drinking adventure, and Devour in Florence. We enjoyed both, and would recommend them highly.
We also thoroughly enjoyed Taste Bologna's classic tour, and agree with everything said above. We enjoyed their Modena tour as well, which was heavy on balsamic vinegar as well as other regional specialties, just in case you're ever in those parts. Even if you choose something else, you should go through their blog entries if you're going to Bologna, many are quite informative.
That being said, you can never go wrong taking advice from Jane, whose pierogis are a special memory of Krakow for us!
