Don't miss in Orvieto

Trattoria del Moro Aronne! The nidi (nests) Rick recommended were a huge hit with our group of 3, including my Italian friend from Rome. One of the best things I've eaten: pillowy hand made large strips of pasta filled with warm pecorino and honey and bechamel. With a glass of Orvieto Classico we were in heaven! I talked to cook Rolanda, a friendly lady who was so very pleased we were there. Easy walk from the Duomo.

This was my favorite meal on our 2009 trip! We are headed back to Orvieto in June 2017 (secretly, it is so I can have that meal again)

Jane - Orvieto is a wonderful & walkable Umbrian hill town - you'll love it! It was in Rick's book that I found the recommendation for this trattoria and for the nidi dish (full name - Nidi di Rondine - means swallow's nests) so maybe the guide will choose del Moro for the group's lunch or dinner. Lucky you!

Jeanine - so very sad but so very true - not only the ingredients but the pasta trick. I've tried twice to make the nidi using the auntie's ricipe on the website. The trick with the pasta is that it can't be so thin that it won't stand in a circle on the plate, like a nest, but not too thick that it's tough. I have failed both times! And then there's the young pecorino that's so soft, delicate-tasting and sliceable, not the hard as a rock aged salty stuff we get in the US. I have an Italian friend who gives cooking classes nearby and I've asked her to try it. It's my only hope of eating this again without having to buy an airline ticket!! Meanwhile I just look at the photo and drool.

I checked out the recipe, and it looks great. Is it a primo piatto, or a desert?

Definitely not dessert. Could be primo or main dish depending on what else is on the menu. A salad and the nidi would be a full meal IMO.
